Unblanched Almond Flour is milled from the almonds with the skin on. It bakes beautifully, even finicky goodies like macarons work a treat. Biscotti and rusks bake like a bomb with this flour. It has more character and taste to it than the blander blanched flour most people know. The milled skins increase the fibre content of the flour. The flour has little brown specks in it from the skin, as you can see in the picture. It bakes just as well the blanched flour and is ideal or bread, muffins, rusks etc.

The almond is classified as a tree nut from the same family as the apricot and peach. It is however not a true nut. The almond fruit is actually a drupe consisting of an outer hull and a hard shell which contains the white edible seed. They are very tasty and one of the most popular nuts, for good reason. It is not just tasty and incredibly versatile but also nutritious. It contains significant amounts of beneficial nutrients such as monounsaturated fatty acids, dietary fibre, antioxidants, vitamins like riboflavin, and trace minerals such as magnesium.

What can I do with it?

Almonds are best eaten raw but can be roasted, salted and ground into nut butter or into flour or meal. You can make almond milk from the nuts which is a very good substitute for cow’s milk.

The flour is very popular in gluten and grain-free cooking and baking. It has a mild and fairly sweet nutty taste. It combines well with coconut flour and also seed flours. Use appropriate starches to lighten your baking if necessary, however, remember that doing so will increase the carbohydrate content.

What can it do for me?

The health benefits of almonds include lower blood sugar levels, reduced blood pressure and lower cholesterol levels. They can also reduce hunger and promote weight loss.

Almonds are low in carbohydrates, high in protein, fibre and fat. Protein and fibre increase satiety. That means they help you to feel more full, so you end up eating less and therefore fewer calories.

Almonds contain lots of healthy fats, fibre, protein, magnesium and vitamin E.

All things considered, almonds are as close to perfect as a food can get.

What can I substitute?

Macadamia flour is most commonly substituted as it has many similar properties. Baking results may however not be identical.

Sunflower seed flour could also be used as a substitute for those with nut allergies or sensitivities.

How do I store it?

Keep In an airtight container in the fridge. Nuts can become rancid quite rapidly when exposed to air and even more so when ground into flour. Keep it in the freezer for longer shelf life.
